Hey guys, how are you all? Today I’m sharing an amazing healthy breakfast. It was so simple and didn’t even take all that long to prepare, it’s definitely a good recipe to start out with as there are not many ingredients involved and doesn’t take all that long.

Ingredients:
For this simple recipe for 1 serving (can be divided easily for smaller portions) you will need…

?300g Tomatoes
?2 Eggs
?1 tsp Crush Garlic or 1/2 a clove
?1 pinch Salt
?1 tbsp oil (I used fry light as healthy alternative)

Method:
?Mince the garlic (if using a 1/2 clove) and fry the garlic with the oil.
?Wash the tomatoes and cut them into medium dice. When the garlic is ready add the tomatoes with a little salt for seasoning and lightly fry for 5-6 minutes, stirring often on medium-low heat. The tomatoes will gradually soften.
?Make 2 wells in the tomatoes and add an egg in each and add a pinch of salt to season. Sprinkle grated cheese on top and then cover with a lid and allow to cook.
Serve with a slice of bread to mop up the tomatoes at the end.
