Hey guys check out this #glutenfree #vegan #healthy dark chocolate cherry filled oats almond cups ! Yes the name is long as they’re 3 layers of yummy goodness! Give this easy recipe a shot and tag me if you do !
Makes around 7 Mini cupcake size
You will need 7 mini silicone cupcake moulds . Alternatively you can also set this in a small cake pan / bake dish lined with baking paper hanging on all the sides so as to be able to remove easily and greased well with a little oil .
? Ingredients:
✅ For the Oats – almond crust :
– 1/2 cup roasted gluten free rolled oats
– 1/3 cup ground almonds
– 1 tsp cinnamon powder
– 1 tbsp almond butter / peanut butter
– 2 large pitted dates
– 2 tsp coconut oil
– 1 pinch salt
✅ For the Cherry filling :
– 10 big or 20 small sized cherries pitted and blended to a coarse paste .
– 1 tbsp honey
– 1 freshly squeezed lime juice
– 1 tsp vanilla / almond extract
– 2 tsp lime zest
– 2 tsp cornflour
✅ For the Dark Chocolate topping :
– 1.5 ( after chopping ) cup 70% dark chocolate chopped into small even pieces
– 1 tsp coconut oil
✅ Method :
➡️ In a food processor grind all the crust ingredients till in all comes together and forms a soft dough consistency. Place a tbsp of this mixture ,press down uniformly in the 7 moulds and refrigerate till you prepare the rest of the toppings.
➡️ In a sauce pan on medium heat , add the crushed cherry with its juices , the filling ingredients and cook till it starts forming a thick paste. Remove and cool . Once cool add a tbsp of the filling to each mould and put it back to refrigerate.
➡️ Melt the dark chocolate on a double boiler till melted or microwave for 30 seconds. Check and microwave for few more seconds till the chocolate melts .Remove and add the Coconut oil . Pour a tbsp using a thin spoon fill on top of the cherry, give each a gentle tap so that it sets uniformly. Refrigerate for 15 mins till chocolate sets .Remove , garnish with roasted oats .
