Here’s my amateur Greek dinner bowl! Packed w/ all the goods! Toasted pita, homemade spinach falafel, cabbage, broccoli and a Greek yogurt dill dip. Really filling and nutrient dense; recipe below ⬇️.

On another note, I have a love-hate relationship w/ virtual classes. It’s super nice working on my own schedule; that means I get to make fancy bowls of food for you guys, but it’s defo harder to learn, ya feel?

Spinach falafel
i n g r e d i e n t s:
1 can chickpeas (rinsed)
1/4 cup cilantro
1/2 cup parsley
1/2 cup Spinach
1/4 cup oat flour (or regular flour)
1/2 cup shredded carrots
Half an onion
2 tbsp tahini
2 tbsp lemon juice
Garlic to taste (fresh or powder)
Salt and pepper to taste

Greek yogurt dip:
i n g r e d i e n t s:
1/4 cup Greek style yogurt (vegan or dairy)
2 tbsp tahini
1 tbsp lemon juice
Dried dill, salt and pepper to taste

Start by sautéing the carrots and onion. Once they are tender, transfer them to a food processor, add in the cilantro, parsley, spinach, lemon juice, tahini and seasonings. Blend until finely minced. Now add the chickpeas, blend until a thick paste forms.

Add the paste to a bowl, add the flour, combine ingredients thoroughly. Form into your preferred falafel shape (add more flour if needed).

Let the falafels sit in the fridge for about 10 mintues. Heat a frying pan with 1 inch oil. Cook the falafel on each side for 2 minutes or until crispy, or bake at 400° for roughly 15-20 minutes, depending on your oven. While the falafels are cooking mix together the dill dip ingredients.
