Here is one of my favorite dishes – Pita with Za’atar Chickpeas and guacamole 🤤😋
This dish is special as I made this when I was juggling from 04:00 till 21:00 everyday between courses and learning for my PhD defense. It was a stressful period but still a memorable one! That period is now behind me but this dish remains as a lovely addition to my menu.
2 – Avocado, ripe
3/4 – Lime
1 – Tomato
3 – Garlic Cloves
1/4-1/2 – Paprika Chilli
4 – Pita Bread
1 Can(400g) – Chickpea
1tsp – Za’atar
1tbsp – Tomato Paste
2.5 tbsp – Olive Oil
2 tbsp – Water
20-24 – Jalapenos
100g – Feta
Few sprigs of Parsley
1️⃣ Coarsely mash avocadoes; add crushed garlic, salt and squeeze 1/2 of a lime juice into it. Add finely chopped & deseeded tomato and paprika (1/4-1/2 – based on how spicy you would like it) to it. Mix well.
2️⃣ In a medium heated pan, add 1.5 tbsp olive oil. Let it heat up, then add drained and washed chickpea. Saute for 2 minutes, add Za’atar, tomato paste and water to it. Mix and cook for 6-8 minutes. Add salt carefully (as Za’atar is a bit salty), if needed. Transfer to a bowl, add a tbsp of olive oil and mix.
3️⃣ Slightly roast up (till how crunchy you want the crust to be) the pita bread with a few sprinkles of water in an oven at 250°c (or as indicated in the pita bread pack).
4️⃣ Assemble pita bread as illustrated in connected post (Layer guacamole and chickpea topping equally amongst the four pita’s. Place 5-6 Jalapenos, crumble feta and garnish with chopped parsley. Squeeze a bit of lime on top, if you like).
