Hello guys! This recipe is super easy, extremely delicious , despite not having sugar, and gluten free. It is inspired by @sannevloet recipes but I have added pumpkin seeds and cacao nibs to the dough. It’s a pumpkin and almond flour bread. You will need to mix in a bowl the dry ingredients first: 2 cups of almond flour, 1 tsp baking soda, 2 tsp baking powder, 2 tsp pumpkin spice, 1 tsp cinnamon, 1/4 teaspoon nutmeg, pinch of salt, 1/3 cup of erythritol ( or coconut sugar according to the original recipe) , 2 tbsp pumpkin seeds, 2 tbsp cacao nibs. Mix very well until combined, then in another bowl mix 1 generous cup organic pumpkin puree, 4 eggs, 1 tsp vanilla extract, 2 tbsp orange zest ( optional). Mix very well, then slowly start pouring the wet ingredients into the dry ingredients ‘ bowl and mix very well, or use a food processor to have a smooth dough. Cover a plumcake tray with parchment paper or brush it with coconut oil, add the dough to the tray and spread it evenly. Bake 45/50 minutes at 175 Celsius degrees . You can decorate it with almonds , raisins or more pumpkin seeds if you want. It’s moist and super soft, can be freezed for the next weeks or it can last up to 5 days. And it’s a great option for people who want to have a good gluten-free, sugar free or dairy free option.
