hello friends! last night i made a tempeh and sweet potato hash using lots of veggies. these kinds of recipes are ideal when there’s leftover veggies, and they make very few dishes cause it’s all in 1 pot!

got through the first week of january, and my has it been a ride already. i’ve been juggling with online classes, xc coaching, and working part-time, plus everything that’s happening in the US. however, i’m very grateful for everything that i’m doing, and can’t wait to adjust more. change is hard, and sometimes life throws curveballs, but focusing on the positive and gratitude always helps. if this past week was rough, i hope this week is better. remember to take care of yourself!

#dEATS: 1/2 block @lightlifefoods tempeh, about 1-2 cups sweet potato (1 small), 1/2 bell pepper, mushrooms, onion, garlic, 1/2 tsp cumin, 1/4 tsp oregano & thyme
cook sweet potato in a pan for a few minutes, then add the onion then bell pepper and cook until soft. add the rest of the ingredients and cook until finished! (add water while cooking to prevent sticking and to cook the veggies more)
