Hello everybody! The weather today is soooo hot and I was thinking about past holidays which inspired me to come up white this pesto salad and crunchy pesto tofu (as the portion of protein) but you can use any protein of your choice with this salad. Recipe ➡️ 1 avocado, 1/4 red onion, 2oz (60g) cherry tomatoes ( approx.), 1tbsp pesto, 4oz (120g)organic tofu, 1/2 lime. Method ➡️ drain the water from tofu, cut in blocks, marinate in half of pesto, add pinch of salt and peper. Cut avocado in blocks, cherry tomatoes in halves, chop the onion, mix all ingredients with remaining pesto, add pinch of salt and peper, sprinkle with 1/4 of lime, put into a fridge and start preparing tofu. For baking tofu use a non- sticky pan. Bake the blocks on each side until they get gold you can use a bit of mild ground red peper. Serve with a salad and sprinkle with lime juice.
