☕️Healthy Vegan Coffee Cake☕️ This INSTANTLY reminded me of coffee cake I had as a kid. It doesn’t have traditional ingredients – and that’s exactly what I love about it!
This was a happy accident when I was playing around with a new banana oat bread to bring to my friend’s lake house last weekend. (See my last post ??)
It makes a perfect grab ’n go breakfast with your coffee / tea and is 100% whole food plant based, oil-free + gluten-free.

I N G R E D I E N T S :
3 cups rolled oats
4 ripe bananas
1 cup water
6 medjool dates, pitted
4 tsp baking powder
2 tsp cinnamon
2 tsp vanilla extract
1/4 tsp salt
1/2 cups walnuts
1/2 cup raisins (optional)
D I R E C T I O N S :
Blend everything except the raisins + walnuts
Pour into a casserole dish
Top with raisins + walnuts (raisins aren’t traditional but they’re a great addition!)
Bake at 400 for 30 mins
Cut into squares
Easy peasy ✌️
