Healthy oil-free Vegan ‘Tu-no’ Salad Sandwich! So happy to not only have my favorite sandwich back.. but it’s even better than ever! Recipe inspired by Forks over Knives and Cathy Fisher’s ‘Straight up Food’.

INGREDIENTS:
Two 15oz can chickpeas, drained and rinsed
1/3 cup tahini
3 Tbsp dijon mustard
3 Tbsp lemon juice
2 tsp apple cider vinegar
1/2 tsp garlic powder
1 tsp dried basil
1/4 tsp cumin
1 Tbsp maple syrup
1/4 cup diced red onions
1/2 cup diced celery
1/2 cup diced pickles
2 Tbsp capers
1/4 tsp sea salt
1/8 tsp black pepper
1/8 cup diced green onion

Optional sandwich toppings: tomatoes, onion, spinach, shredded cabbage, cucumber, avocado.
‘Food for Life’ Ezekiel bread is WFPB, sprouted and oil-free

DIRECTIONS:
Place the drained/rinsed chickpeas in a mixing bowl and mash with a potato masher or back of fork.
Add remaining ingredients to mixing bowl with mashed chickpeas and incorporate. Taste & adjust seasonings as needed. (Keeps in fridge 5-7 days).
