Healthy oil-free Vegan Sweet Pineapple Fried Rice! Tropical flavor paradise recipe by @plantbased.traveler

INGREDIENTS:
2 packed cups cooked brown rice
1 red bell pepper, diced
2 medium carrots, diced
3 spring onions, diced
1 1/2 cups chopped broccoli florets
1/2 cup shelled edamame (fresh or frozen)
1/3 cup corn (fresh or frozen)
1/3 cup peas (fresh or frozen)
1 cup fresh pineapple pieces, finely chopped
TOFU SCRAMBLE:
1 large sweet onion, finely chopped
3 cloves garlic, minced
1/2 block firm tofu
2 tsp nutritional yeast
1/4 tsp turmeric
1/4 tsp black pepper
SAUCE:
1/4 cup coco aminos
1 tsp brown coconut sugar
1/2 tsp garlic powder
1/2 tsp sesame seeds
1/2 tsp cornstarch
1/2 tsp fresh minced ginger
1/2 tsp rice vinegar

*OPTIONAL ADDITIONS:
1/4 cup unsweetened shredded coconut
Red pepper flakes to taste

DIRECTIONS:
Cook 1 1/2 cups brown rice with 2 1/4 cups veggie broth in a rice cooker. Let rice cool completely, then refrigerate at least 2 hours (overnight is best) so fried rice doesn’t turn out mushy.
When ready to make, remove any frozen veggies from freezer to thaw. Prep/chop fresh veggies (bell pepper, carrots, broccoli, spring onion). Finely chop the onion and sauté in a large pot on medium-high heat until caramelizes (use 1 Tbsp veggie broth at a time to prevent sticking). Stir in the minced garlic.
Crumble tofu with a fork and add it to the sautéd onion along with remaining ingredients listed for the ‘tofu scramble.’ Stir together and cook until all liquid has evaporated. Set tofu scramble aside and sauté the chopped bell pepper, carrots, broccoli, and spring onion until slightly tender but not overcooked (use 1/4 cup veggie broth to sauté). Add the rice, corn, peas, edamame and stir together until heated through. Make the ‘sauce’ in a small bowl and stir into the fried rice. Add tofu scramble back to the pot and fold in pineapple pieces. Enjoy in a pineapple bowl! (See photos for how to make pineapple bowl).
