Healthy Carrot Cake Cookies.
Sugar-Free, Vegan, and Wholesome.
Those chewy treats are the perfect breakfast on a lazy day. They’re so easy to make, only take 10 minutes of prep time, and are perfect for carrot cake lovers.

Ingredients:
1/2 cup oat flour (or ground oat flakes)
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 1/2 cups peeled grated carrots (about 3 carrots)
1 cup roughly chopped raw pecans or walnuts
1/4 cup golden raisins
1/2 cup honey
1/2 cup coconut oil (or any vegetable oil)

Mix all ingredients together, shape into 10 equal sized balls and flatten them, bake on parchment paper in a preheated oven for 20-25 minutes in 190.
