Have you tried hummus pasta before? This is a throwback to one of my most popular recipes! 💛 When I made this pasta I didn’t tell to my boyfriend what we were eating and his guess was ”creamy creme fraiche pasta”. He could have been right! I mean it’s so creamy, delicious and full of flavour from hummus, garlic and tangy lemon. And a cherry on top: super simple and effortless to make. ✨⠀⠀⠀⠀⠀⠀⠀⠀⠀
Hummus for two ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 can (170g) of chickpeas⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 clove of garlic⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp tahini⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
a pinch of black pepper⠀⠀
a splash of water if needed ⠀⠀⠀⠀⠀⠀⠀
whole wheat pasta (reserve 150ml pasta water) ⠀
a splash of olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
two handfuls of fresh spinach ⠀⠀⠀⠀⠀⠀⠀⠀⠀
a squeeze of lemon to finish ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Make the hummus by simply tossing all of the ingredients into a blender and blend until smooth.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cook the pasta according to the package, drain and add a splash of olive oil. Reserve 150ml of pasta water.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place the empty pot back on the stove over small heat. Add hummus and pasta to the pan and stir to combine. Pour in pasta water, start slowly. Pour until the sauce reaches desired consistency. Add spinach and sauté until it wilts. Add salt and pepper if needed and finish the dish with a squeeze of lemon juice. Enjoy! 😋⠀
