Have you had lychee ceviche before? Ceviche originates from Spanish colonies, featuring raw, marinated fish as a base element, usually garnished and served as an appetizer. First time I had this, was when I was in Mexico four years ago, it had white fish in it. I couldnโ€™t remember what type of fish it was, but it was extremely fresh, clean and divinely delicious.

Reminiscing my travel, I created this recipe to recreate it, but vegan/vegetarian style. This lychee recipe makes for a perfect plant-based alternative to the original ceviche and it also happens to be gluten free. It is very healthy and my lychee were extra fresh. Itโ€™s perfect as a side dish or a party dips, or even as an appetizer. This can be served with bread or chips. Depends on what youโ€™re in the mood for. Enjoy!๐Ÿค๐ŸŒฑ๐ŸคŽ

Ingredients: I used fresh cut lychees, figs, ginger, lime, onion, fresh peppermint, parsley, red chilli, salt and pepper.
