Sorry for being MIA the past couple of days. I was enjoying my weekend + today my cousin came to town from Paris so we’ll be doing a lot of catching up since it’s been over a year since we’ve seen each other! She’s also a fellow vegan ? so we’ll be having fun in the kitchen! ?? Thought I would share some of these delicious BANANA CASHEW CHOCOLATE CHIP COOKIES ? if you have some really ripe bananas just laying around then these will be perfect to make!
These Banana Cashew cookies are thick & fluffy! Enjoyyyy! ? ?
Recipe: ?
-2 really ripe bananas
-1/2 cup cashew butter
-1 tbsp vanilla extract
-1 1/2 cups spelt flour
-1 tsp cinnamon powder
-pinch of Himalayan salt
-1 replacement “egg”
-2 tbsp coconut sugar
-2 tsp baking powder
-100g dark chocolate chips
Instructions:
-Preheat oven to 375 degrees.
-In a large mixing bowl, mix the mashed bananas, cashew butter, vanilla extract, replacement egg and coconut sugar.
-Whisk together spelt flour, baking powder, cinnamon powder and salt in a small mixing bowl. Add the wet ingredients to dry and stir till just combined. Fold in the chocolate chips.
-Drop by spoonfuls onto silpat lined or lightly greased cookie sheets.
-Bake at 375° for 15-18 minutes or till lightly golden brown around the edges. Cool for 3-5 minutes on the cookie sheet, then remove to cooling racks.
