Happy Thursday! Throwing it back with these vegan tacos because it is almost the weekend, and for some reason, tacos put me in the party/weekend mode! Grab the recipe below 👇🏻⁠⁠

Ingredients:⁠⁠
✓1 Longeve Zesty Taco Bag⁠⁠
✓1 t ghee⁠⁠
✓One medium onion, finely chopped⁠⁠
✓One large zucchini, cubed⁠⁠
✓¼ t chili powder⁠⁠
✓½ t ground cumin⁠⁠
✓½ t sea salt⁠⁠
✓Three corn tortillas⁠⁠
✓Sliced avocado⁠⁠
✓Lime wedges and sprigs of cilantro⁠⁠
⁠⁠
Quick Salsa⁠⁠
✓Two medium ripe tomatoes, diced⁠⁠
✓½ medium red onion, finely chopped⁠⁠
✓¼ cup chopped cilantro⁠⁠
✓Sea salt to taste⁠⁠
⁠⁠
Steps:⁠⁠
✓Heat ghee in a large saucepan over medium-high heat. Add onion and zucchini. Stir in chili powder, cumin, and garlic. Add salt and pepper to taste.⁠⁠
✓ To prepare the protein crumbles, follow the package instructions.⁠⁠
✓To make salsa, combine tomato, red onion, and cilantro in a small bowl.⁠⁠
✓Transfer the tortillas to serving plates. Fill with protein crumbles, zucchini, and top with avocado and salsa. Garnish with lime wedges and cilantro.⁠⁠
