Happy thanksgiving everyone! This is one of my all time favorite recipes! Been making this for a while and thought I’d share it with y’all? This is my pumpkin coffee cake recipe:) This might just be slightly better than Starbucks if you ask me? Deats down below??

Dry Ingredients:
– 2 cups of gf flour ( i used 1:1 ratio of oat flour and white rice flour)
– 1/2 cup of brown sugar + 3 tbsp of stevia
– 1 tsp baking powder
– 1/2 tsp baking soda
– 4 tsp of pumpkin pie spice
– 1 tsp cinnamon
– 1/2 tsp sea salt

Wet Ingredients:
– 1 cup pumpkin purée
– 6 tbsp of almond milk or oat milk
– 1 tsp apple cider vinegar
– 2 tbsp avocado oil or olive oil
– 2 tbsp of coconut oil (melted)

Crumble:
– 1/2 cup of any gf flour (oat, white rice, coconut, almond, etc.)
– 1/4 cup of brown sugar + 2 tbsp stevia (or coconut sugar)
– 3 tsp cinnamon
– 3 tbsp melted vegan butter (I recommend vegan butter but if you don’t have this you can sub for avocado oil)

Directions?
Preheat the oven to 350°F. Mix all the dry ingredients in a bowl. In a separate bowl mix the wet abs combine! Slowly fold in the mixture, don’t over mix! Spray a square pan with nonstick spray or line with parchment paper. Pour half of the batter in, then sprinkle about 1/3 of the crumble on top. Next pour the rest of the batter on top and sprinkle the rest of the crumble. The top should be completely covered in the crumble?

Bake for 32-35 minutes. Let the coffee cake cool for at least 20 minutes before cutting into it:)
