Happy Sunday! It’s been such a long time since I’ve done some baking and today I decided to make this epic MAPLE WALNUT BANANA BREAD!😍 I had tones of ripe bananas waiting to be used for baking, so banana bread felt like the best option. Honestly the best decision of my day, because this loaf ended up being really moist and sweet with the additional crunch and flavour of the walnuts. A must do to include to your holiday baking sessions!

Recipe:
– 1 1/2 cup unbleached all purpose flour
– 1/2 tbsp cinnamon
– 1 tsp baking soda
– pinch of salt
– 3 ripe mashed bananas
– 2 eggs (can sub flax eggs)
– 1/2 cup maple syrup
– 1/3 cup coconut oil
– 1 tsp maple extract
– 1 cup chopped walnuts

Instructions:
Preheat oven to 350F. Grease a loaf pan and set aside. In a bowl, mix together all the dry ingredients. In another whisk together all the wet ingredients. Add the wet ingredients into the dry and mix until fully combined. Add the walnuts and mix until incorporated. Pour the batter into the prepared pan and bake for 55-60 minutes or until a toothpick comes out clean. Let the loaf cool down before serving. Enjoy!
