🍂 Happy Sunday 🍂

Alex and I have made it our mission to empty our fridge/freezer and storage cupboard over the next week. While we generally meal plan and therefore only buy stuff for those meals, we have changed our plans a fair few times recently due life being a bit stressful. So today, we made a delicious meal of Teriyaki Cauliflower and rice 🥰

Ingredients
– 1 medium cauliflower
– Olive oil
– Salt/Pepper to taste
– 1 tbsp sesame oil
– 1/4 cup soy sauce
– 1 tbsp rice vinegar
– 1 tbsp @sriracha_fg
– 1 tbsp grated ginger
– 2 tbsp @koro_uk maple syrup
– 1 tbsp cornstarch
– 1 tbsp water

Method
– Preheat the oven to 180C
– Coat the cauliflower pieces in olive oil and salt and pepper and bake for about 25 or until soft
– Add all remaining ingredients (besides cornstarch and water) to a wok and cook while whisking. While it’s heating up, mix cornstarch with water
– Once the sauce is bubbling, whisk in the cornstarch mixture and cook until thick. Add the cauliflower and mix until well coated
