Happy National Chocolate Cupcake Day! Yes, there is such a day?
Vegan Chocolate Cupcakes with Japanese Sweet Potato Frosting

For the cupcakes:
1.5 cups white spelt or wheat flour
1 cup Natural Earth Products organic cane sugar
1/4 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla
1 cup water
1/2 cup oil
1 Tbs Natural Earth Products Organic white vinegar (yes, vinegar!)
Preheat oven to 350 degrees. Mix dry ingredients, add wet ingredients and mix to a smooth batter. Pour into a 12 regular size muffin pan (or 24 mini) lined with muffin liners and bake for 20 minutes (for mini muffins check after 15 minutes). Check with a wooden toothpick for readiness, if necessary bake for additional 5 minutes.
For frosting:
3/4 cup mashed Japanese sweet potato* skin removed and still warm from cooking
6 Tbs coconut oil or vegan butter
1/4 cup Natural Earth Products organic maple syrup
2 tsp vanilla extract
2 Tbs arrowroot powder or cornstarch
Pinch salt

Mix all ingredients with a blender. Freeze for 30 mins or refrigerate overnight.

*use a purple sweet potato for a cool hack of natural food coloring!
