?HAPPY HUMP DAY? it’s been a week since I have posted something so saved something extra special for you all! I took a little break from posting this week because I was away! I hope everyone is enjoying this gorgeous weather and enjoys this delicious roasted veggie Buddha bowl?

This bowl features roasted cauliflower, broccoli, brussel sprouts, shredded carrots, and sautéed sugar snap peas on a bed of noodles with a spicy peanut drizzle?

INGREDIENTS (2 servings)

1 large head of broccoli, cut into florets
1/2 head of cauliflower, cut into florets
1 cup of sugar snap peas
Brussel sprouts, cut in half (to taste)
A handful of shredded carrots
2 cups of Asian noodles (any kind)
Spicy peanut dressing
Seasoning of your choice
Sesame seeds and chia seeds for garnish
Olive oil

STEPS: Preheat oven to 200 Celsius. Chop up cauliflower, broccoli, and brussel sprouts and season with spices of your choice and olive oil on a baking sheet. Cook for 20 minutes stirring half way through. Meanwhile, sauté sugar snap peas for a few minutes until slightly browned. Cook noodles according to package. Assemble bowl as follows in the picture and drizzle spicy peanut dressing overtop and garnish to your liking. Enjoy!
