We absolutely love Matcha and anything matcha flavoured ? Since I was looking for ideas to incorporate matcha into baking and I knew a the weather was going to be fantastic this week I used our raw vegan cheesecake recipe to make this lime @inspiriko cheesecake ? So it’s not only a cheesecake with matcha but also full of adaptogens that support stress relief. Is there anything better? I don’t think so ?
And here is my recipe ?
⭐️ half a pack of your favourite biscuits (We used @mcvitiesofficial digestives)
⭐️ 2 tbsp butter, melted
⭐️ 2 cups cashews soaked overnight
⭐️ 1/2 cup of coconut milk
⭐️ 1/3 cup of melted coconut oil
⭐️ 1/3 cup of maple syrup or agave nectar
⭐️ 1/4 cup of lime juice
⭐️ Multiple teaspoons of Matcha (we used @inspiriko ) ✨ Blitz up the biscuits until crumbly and mix with butter for the base. Press base into a cake tin and freeze for about 15 minutes
✨ Blend all the ingredients besides the matcha together and pour about 1/3 on the base, freeze again for 15 minutes ✨ Add about 2-3 tsp Matcha to the cheezecake mix and blend. How much matcha depends on your preference. Pour over the cheezecake and freeze again
✨ Add some more Matcha to the cheesecake mix to get a darker colour, blend and pour over the cheesecake. Freeze for 1 hour at least and take out about 10 minutes before serving so it’s easier to cut.
