Farinata di Ceci is a thin salty kind of pancake made with water, salt and chickpea flour, that once baked comes with a delicious golden crust.

Typical of the city of Genoa, the legend of this recipe dates back to 1284 when the Republic of Genoa defeated Pisa in the battle of Meloria.

On their return from the war, the Genoese ships found themselves involved in a storm and some barrels of oil and chickpea flour overturned bathing in saltwater. Because of the scarcity of provisions, the only possible solution was to recover the lost ingredients.

So the sailors were served that mixture of chickpeas and oil and – in an attempt to make less unpleasant – they dried it in the sun until obtaining a sort of pancake. Once on land again, the Genoese perfected the recipe, making it the speciality that we still can taste today.

Nowadays, the Farinata di Ceci is an easy recipe made with basic common ingredients all over the boot. Depending on the area they are typical of, the name is different such as the cecina pisana, the torta livornese, the socca piemontese, the fainè sassarese and so on.

But as Shakespeare taught us, a rose by any other name would smell as sweet, and so no matter how we call it as this famous Italian street food will always delight your palate: just give it a try!
