Made a Halloween themed vegan squid ink pasta. 🍝
I like this vegan squid ink sauce, it’s really tasty, great for paella, too !!

For Halloween version, I added mashed pumpkin and purple sweet potato 🧡💜🧡💜

Vegan Squid Ink sauce
Ingredients: (serving 2)
✔️1/2 cup dried Hijiki
✔️2 sheets nori (crumpled)
✔️1.5 TBS black sesame paste
✔️2 dried chili peppers
✔️1/2tsp kelp powder
✔️1TBS olive oil
✔️1 cup vegetable broth
✔️Salt and pepper to taste

Instructions
1 Soak Hijiki in warm water for 15 minutes, drain and wash under running water, and squeeze.
2 In a skillet, heat olive oil, sauté hijiki, and chili peppers , sprinkle kelp powder, pour vegetable broth, add nori, and black sesame paste
3 Simmer until broth is almost gone.
4 Cool it down, transfer to a blender, blend until smooth like squid ink sauce. If it’s too thick add pasta water
