guys, I’m SO excited to share this recipe with you, it’s one of my favorite things I’ve ever made🤩 This is a frozen raspberry cheesecake, and it was so good it even got approval from my non-vegan dad! Wish I could take credit for coming up with this idea myself, but it’s totally inspired by one of @erinrutherfordd’s posts, so go check out her account too! And here’s the recipe for my version for anyone curious how I made it!

Crust ingredients:
-2 tbsp oats
-2 tbsp oat flour
-1 tbsp almond butter
-1 tsp maple syrup
-splash almond milk

Filling ingredients:
-1/2 cup soy yogurt (I used @silk)
-1 scoop vanilla protein powder (I used @drinkorgain)
-1 tbsp lemon juice

Swirl ingredients:
-2 tbsp frozen raspberries, thawed and mashed

Method:
-Line a small cake pan with parchment paper
-mix all crust ingredients together and press into bottom of lined pan
-mix all filling ingredients until smooth and pour over crust
-add spoonfuls of mashed raspberries on top and use a toothpick to swirl
-let chill in freezer for at least 2 hours
-remove from freezer and unwrap the cheesecake from the parchment paper
-let thaw a few minutes, then slice with a knife and enjoy!
