Grown ups manicotti 🌱

Ingredients:
-12 oz jumbo shells
– @luciniitalia Tuscan marinara
-piping bag
-parsley, minced
manicotti mix:
– @theculturedkitchen herb and chive cashew reserve
-1/4 tsp garlic powder
-1/4 tsp onion powder
-1/4 tsp nutmeg
-1 tbsp extra virgin olive oil
-1 shallot
-3 cloves garlic
-10 oz mushrooms, chopped
-4 cups spinach
-5 oz 365 @wholefoods plant based parm

Directions:
1. Heat oven to 375
2. Heat a pot of water and cook shells for 9 minutes. You want them to remain a bit firm.
3. Heat extra virgin olive oil over medium heat
4. Add shallot, garlic, mushrooms and cook for 3 minutes. Add spinach. Cook until spinach has wilted
5. Turn heat off and add cashew cream and spices and half of the parm.
6. mix until incorporated
7. Put manicotti in a piping bag (I use cupcake piping bags, but you can also use a zip log bag)
8. Put a thin layer of sauce (1/4 of sauce) in the bottom of an 13 x 9 pan and stuff shells with manicotti mixture, placing them in the pan
9.Place remaining sauce over top of shells
10. Top with rest of parm
11. Bake, covered with foil for 30 minutes
12. Sprinkle with parsley
