Grilled Corn And Quinoa Salad With A Creamy Yogurt Tahini Dressing.
Ingredients: for the salad-
1 cup quinoa
2 full yellow corn cut off the cob
1 cup heaped spring onion chopped ( white and green parts)
1/2 cup fresh coriander chopped
1 big fat non spicy green chilli chopped
1/2 cup grated cheddar cheese
For the dressing-
3 Tbsp heaped thick yogurt beaten
2 Tbsp tahini
1/2 lemon juice
3/4 tsp salt
1/4 tsp freshly crushed pepper
To garnish-
1/2 cup grated cheddar cheese
Method:
To make the quinoa, put 2 cups water to boil in a pan. When it starts boiling add the quinoa, give a quick stir, cover with a lid and let it cook on slow for 15 minutes. Once all the water has dried up, switch off the flame and keep aside to cool completely. To make the corn- make a non stick grill pan hot, add your corn and sauté till it’s slightly charred all over. Remove and keep to cool. In a bowl mix all the ingredients under for the salad and mix together. To make the dressing, simply mix all the ingredients under for the dressing and add it to the salad once you are ready to serve. Garnish with cheese. Enjoy:))
