Green Minestrone Soup
(Vegan and Gluten Free)

This soup recipe is one of the first recipes I ever learned how to make. In fact @rev__lon wrote me a similar recipe a few years ago and I have kept it every since. Why this recipe is so good is because its the spine that most soup, stew and pasta sauce recipes come from. The key here is the method in which you add certain vegetables to the pan, depending on how much cooking time they need to become flavourful. Have a read below to see what Iโ€™m on about. I have written the ingredients in order that you will need them to illustrate more clearly the order in which they should be cooked.

2 tbls of vegetable oil
1 finely diced onion
2 crushed cloves of garlic (I use this great mix of chilli and garlic paste I got from an Italian supermarket, but regular crushed garlic and 2 diced whole chilis would do the trick too)
2 tbls of salt
2 tbls of cracked pepper
2 diced carrots
2 diced celery stick
1 bay leaf
1 bunch of finely diced parley stalks
1 bunch of finely diced coriander stalks
2 diced parsnips
1 tbls of turmeric
1 tbls of paprika
1 diced whole unpeeled red skinned potato (red potatoes tend to get less mushy)
2 cups of vegetable broth
3 cups of water
1 tin of draped and washed chickpeas
1 cup of black (French style) lentils
2 cups of gluten free pasta of your choice

1. Heat oil on medium heat in a large pot
2. Add onion and cook for 5 minutes
3. Add garlic, salt and pepper and fry for another 3 minutes while shaking the pot
4. Add carrots, celery and bay leaf and cook for 10 minutes
5. Add the parley and coriander stalks and cook until fragrant for another 5 minutes
6. Add diced parsnips, turmeric and paprika and cook for another 5 minutes
7. Add in the potato and cook for a few minutes
8. Add the vegetable broth and bring to boil, before covering and lowering the heat to a simmer for 20 minutes
9. Add the water and increase heat to a medium heat and bring to a boil, before lowering the heat again
10. Add the lentils, chickpeas, cover the pot again with a lid and simmer for 20 minutes
11. Add the pasta and cook according to packet instructions in the soup
