Green curry love πŸ’š
Have you eaten your greens today?
I am so in love with this mixture of lime, lemon grass, garlic, ginger and coconut – it smells incredibly delicious πŸ’šπŸ’šπŸ’šπŸ’š
Green Thai Curry adopted from
Green sauce:
2 garlic cloves
1 tbsp chili flakes
2 inches ginger
1 stalk lemongrass
1/2 bunch of scallions
Juice of 1/2 lime
1 tbsp no fish sauce (alternative: soy sauce)
1 can of full fat coconut milk
small bunch cilantro
small bunch basil
Blend ingredients until smooth

1 zucchini
1 pak choi
100g sugar snaps
1/2 bunch scallions
200g broccoli (broken into florets)
200g romanesco
Chop all vegetables and stir-fry in a preheated pan with some coconut oil for about 5 minutes (maximum heat). Deglaze with the green sauce and turn the heat off as soon as it starts to simmer.
