Green chive dumpling wrappers with a mushroom, cabbage and black sesame filling from @spatulisaa⠀

Filling:⠀
200 g mushrooms finely chopped⠀
2 shallots finely chopped⠀
1 C finely chopped green cabbage⠀
3 cloves garlic crushed⠀
2 cm piece ginger grated⠀
1 T cornflour⠀
1 T Chinese cooking wine⠀
1 T sesame oil⠀
2 T soy sauce⠀
2 T kecap manis⠀
1 T rice wine vinegar⠀

Combine all the ingredients together and fry off in a large pan for 5 mins. Set aside.⠀

Dumpling wrappers:⠀
Small bunch fresh chives roughly chopped⠀
330 g plain flour⠀
220 hot (just boiled) water⠀

Add the flour to a large bowl with a good pinch of salt. Blend the chives and hot water together using a stick blender, then strain the mixture through a sieve, pressing out all the chive water in a separate bowl.⠀
Pour the chive water into the bowl with the flour and use chopsticks to mix until the dough starts to come together and is cool enough to handle. Tip the dough onto a bench and kneed for 8 – 10 mins until a smooth, soft, and squishy dough forms – it should feel similar to playdough! Cover with a wet cloth and let rest for 20 mins.⠀
Cut dough into quarters, and each quarter into 6 evenly sized pieces. Roll each piece into a ball, then lightly four a surface and roll out into a thin circle. Place a slightly heaped teaspoon of filling in the middle, and fold into whichever shape you prefer.⠀

To cook the dumplings:⠀
Heat a large drizzle of olive oil in a large pan. Arrange half the dumplings in the pan and fry for 2 mins until the bottoms start to crisp. Combine 3 T cornflour with 1/2 C of water. Pour half the cornflour/water mixture into the pan (carefully, as it will splatter!), cover the pan with a lid, and steam for 3-4 minutes. Remove the lid and cook for another min or two until no liquid remains.⠀

Serve dumplings straight away, and serve topped with a mixture of rice wine vinegar (1/4 C), soy sauce (2 T), sesame oil (1 T), and chilly flakes (1 T).⠀

Makes 24 dumplings.
