Grain bowls are kind of a staple in my house. Easy, quick, packed with nutrients and they’re only as limited as your imagination! So for me they’re never boring ?
.
I always start with a bed of greens, in this case baby spinach. Add in a grain and some protein (brown rice and beans for this one) and then whatever else I like. I added in some roasted veg. Banging dinner times ahead ?
.
I made up some tahini miso rice in my rice cooker. You can make this on the stove too but I like the convenience of not having to pay attention to it the whole time.

For the rice…
.
1 cup brown rice
2 Tbl white miso
2 cups water
1 Tbl @the_ginger_people minced ginger
1/2 Tbl soy sauce
3 Tbl tahini
3 medjool dates chopped
1 400g tin of beans (I used a three bean mix) drained and rinsed

? dissolve the miso in 1/2 cup of hot water. Add rice, miso water and remaining 1.5 cups of water to your rice cooker and switch it to cook
.
? when the rice has finished the cooking process stir through the remaining ingredients and let it sit on the warm function for 10 minutes
.
Add it along with whatever else you like to your grain bowl. It’s your masterpiece, have fun! Mix up the spices to give a Mexican twist, stir through sriracha for some spice. Go nuts!

Actually, nuts would add a nice crunch… ?
