Golden Lentil Soup !!

This past winter, I became quite obsessed with having soups, I had a bowl for either lunch or dinner almost every single day!! As I was making soup so often I was able to try so many new recipes and this is one that I had on an almost weekly basis due to how delicious it is! It is perfectly spiced and incredibly creamy!! If you’re a fan of curry and curry flavoured things (in particularly Dahl) you’re going to LOVE this!! 💛💛

Makes 3-4 servings 🙂
Ingredients:
– 1 tsp olive oil
– 1 onion, chopped
– 1 inch ginger, minced
– 3 cloves garlic, minced
– 1 tbsp of curry powder
– Salt & pepper , to taste
– 1 sweet potato, chopped
– 2 carrots, chopped
– 3-4 cups veggie stock
– 1 cup lite coconut milk
– 1 cup red lentils
– Turmeric, cumin & cinnamon, to taste (optional)
– 1/2 lemon, juiced

To serve:
– Chilli flakes
– Parsley
– Green onion
– Pumpkin seeds

Recipe:
1. Heat the olive oil in a large pot over medium heat, once hot add the onion and sauté for 3-5 minutes
2. Add the ginger and garlic then sauté for another minute before adding the curry powder as well as a pinch of salt and pepper
3. Cook this for a further 30s- 1 minute before adding the sweet potato and carrots, then cook for another 2 minutes
4. Add the vegetable stock, coconut milk and lentils into the pot and increase to a boil, once boiling reduce the heat to low and cook for 10 minutes covered then 10 minutes uncovered, stirring occasionally. Add any of the optional spices to taste if you feel like your soup needs more flavour.
5. Optional step: transfer 1/2 the soup into a blender and blend until smooth then add back into the pot
6. Before serving, add in the lemon juice. Then serve with whichever toppings you prefer.
