Gochuyang mushroom fried rice

Another variation of vegan fried rice!

Serves 2

230g white rice (I used Japonica aka sushi rice but use whatever you have
200g mushrooms, sliced 
2 tbsp gochujang (Korean chilli paste)
½ tbsp gochugaru (Korean chilli flakes)
3 spring onions, chopped
2 garlic cloves, chopped
1 tbsp soy sauce
1 tbsp sesame seeds
1 tbsp sesame oil
1 tbsp cooking oil

Precook the rice and set aside to cool. Heat the oil and add the spring onions and garlic, frying for 1 minute. Add the gochujang, gochugara and soy sauce. Add the mushroom and cook for 2-3 minutes, until the mushrooms are cooked. Add the rice and cook for 2-3 minutes. Top with the sesame seeds and sesame oil and serve. Enjoy!
