Gochujang Mushroom Tacos
These were super flavorful and easy to make. We marinated oyster mushrooms but you could use a different mushroom or tofu would be good too! The tacos are topped with a sriracha mayo, spicy sesame slaw, avocado and cilantro.

Gochujang Mushrooms
* 10 oz oyster mushrooms- sliced
* 1/4 cup gochujang paste
* 1 small shallot- minced
* 1 inch ginger- grated
* 2 cloves garlic- minced
* 1/3 cup soy sauce
* 2 Tb mirin
* 2 Tb garlic chili sauce
* 2 Tb agave
* 1 Tb sesame oil
* 1 Tb rice vinegar
* Broth or water to thin if needed

1. Whisk together all ingredients and stir in mushrooms.
2. Marinate for 15-30 minutes.
3. Sauté in skillet until mushrooms are done to your liking.

Sesame Slaw
* 2 cups green cabbage- shredded
* 1/4-1/2 cup red cabbage-shredded
* 1 carrot- shredded
* 2 Tb sesame oil
* 1 Tb rice vinegar
* 1 Tb soy sauce
* 1 Tb agave
* Sesame seeds
* Chili flakes

1. In a large bowl, mix together the cabbage and carrots.
2. Whisk oil, vinegar, soy sauce and agave together and toss with veggies.
3. Mix in sesame seeds and chili flakes.
