Gnocchi with Roasted Broccoli by @janetsmunchmeals ??
One of the simplest and coziest weeknight dinners you can make! I have a new obsession with gnocchi and I want to eat it every day. That can’t be a bad idea, right? ???
They’re so versatile and go great with simple roasted veggies like in this dish. Feel free to add in some extra protein like seasoned chickpeas. The simple recipe is below!! ??
2 packed cups broccoli florets
1 tbsp olive oil
1/2 tsp each kosher salt and black pepper, divided
2 to 3 tbsp vegan butter, to taste
3 to 4 servings gnocchi
Squeeze of lemon juice
1 to 2 tbsp finely chopped fresh parsley
Red chili flakes for serving
Vegan parmesan for serving
Preheat oven to 400 degrees F. Cut florets into small, bite-sized pieces. Place them onto baking tray lined with parchment paper. Drizzle with olive oil, toss, and sprinkle with 1/4 of the salt and pepper. Roast for 10 to 15 min until just starting to brown in spots. Then remove from oven. Meanwhile, cook gnocchi according to package directions, then drain. Place a large pan on medium heat and add the butter. When melted, add cooked gnocchi and remaining salt and pepper. Cook for 3 to 5 min, reducing heat if needed, until gnocchi are starting to turn slightly golden in the outside. Stir in roasted broccoli, lemon juice and fresh parsley, and serve topped with red chili flakes and vegan parm. ??
