π Gluten-free, Vegan βYellowβ Cake with a Sweet Potato-based Chocolate Frosting π
We celebrated my birthday earlier this week and tried our hand at making a longtime fave of mine: yellow cake. πWe were super happy with how it turned out!
Gluten-free, vegan yellow cake (adapted from @lilaruthgrainfree to be vegan + whole food plant based)
1 flax βeggβ (1 tbsp ground flax seed + 3 tbsp water – combine in a small dish for 5-10 minutes before adding)
2.5 cups almond flour
3/4 cup tapioca starch
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup almond milk
1/4 cup unsweetened applesauce
1 tablespoon apple cider vinegar
1 tablespoon vanilla extract
Preheat oven to 350F.
Whisk dry ingredients in a large bowl.
Add almond milk, flax egg, applesauce, apple cider vinegar, vanilla extract and mix until batter is smooth.
Pour batter into parchment paper lined 8Γ8 baking dish.
Bake for 40 minutes, then cover with foil and bake for another 10 minutes.
Let the cake cool for 15 minutes before carefully flipping it over onto cooling rack or plate to finish cooling.
The frosting recipe is credited to @okonomi.kitchen – we added a little maple syrup to sweeten ours up a little, but this recipe is fab. Weβd definitely recommend it!
