Gluten free Vegan Ramen! 🍜
Ramen has to be one of my favorite dishes to make and eat!

Recipe:
2 garlic cloves
Thumb size piece of ginger
1 tbsp Olive oil
1 brick or more of Lotus gluten free noodle
Vegetable stock
Blanched bok choy
Cooked mushrooms
Crispy Tofu Cubes
Raw Bean Sprouts
Chopped green onions
Lime slices

In large pot add oil and cook ginger and garlic. Add vegetable stock and heat. Cook noodles separate. Place noodle in bowl and build soup using the remaining ingredients. Squeeze slice of lime over ramen.
Some additional toppings to add are soy sauce, chilli oil, sesame seeds, siracha and other veg if you wish.
