Gluten Free taro abacus shaped pasta by @woon.heng 💛 Recipe:
Ingredients
Dough⠀
~ 400g taro cut into small cubes, boiled with a bit of salt and mashed. Texture should be just like mashed potatoes⠀
~ Tapioca flour ⠀

Start by adding 1/4 cup of tapioca flour to taro, slowly knead into dough and add more flour. I used a little over 1 cup. Dough is ready when it’s not sticky, and form into a small ball. Roll out to a thin log, cut into 1/2 inch cube. Roll them into small ball, shape it into abacus by pressing the middle with your forefinger and thumb together.⠀
In a pot of boiling water, boil these cute abacus shaped taro pasta until they float up. Ladle, set aside and drizzle some oil to avoid pasta from sticking together.⠀


Stir Fry ingredients:⠀
~ 7-8 mushrooms, soaked and cubed⠀
~ 3 seasoned tofu, cubed⠀
~ 1 package of dried radish (optional)⠀
~ 3 cloves of garlic, minced⠀
~ 2 tbsp mushroom stir fry sauce⠀
~ 2 tbsp soy sauce⠀
~ salt and white pepper to taste⠀

In a heated pan with 2 tsp oil, saute garlic until soft, add mushrooms and stir for few minutes. Then add tofu, dried radish and all seasonings. Add taro pasta and mix until well combined. Season please, add a little water if it’s too dry. Serve warm with more chopped scallions and pepper shred. Enjoy!
