Gluten-Free Pancakes

Ingredients:
– 2 cps gluten-free 1:1 flour
– 1/2 cp monk fruit sweetener
– 1 tsp salt
– 1 tbsp vanilla extract
– 1 cp water
– 1 tbsp olive oil
Instructions:
– Drizzle olive oil in a large saucepan and heat on the stove over medium heat.
– Whisk all ingredients until mixed thoroughly.
– Pour 1/4 of batter into the saucepan and let heat until the batter starts to bubble and form around the edges.
– Flip pancake with spatula and let cook for 45 more seconds.
– Repeat cooking instructions for the remaining batter.
– Add maple syrup, vegan butter, and sliced bananas to the top.
