Gluten-Free and Sugar Free Chocolate Chip & Double Chocolate Cookies

For the Chocolate Chip Cookies:
Ingredients:
– 2 vegan eggs (I used Paneriso)
– 1 1/2 cp gluten-free 1:1 flour
– 3/4 cp melted vegan butter
– 1 cp raw monk fruit sweetener
– 2 tbsp monk fruit sweetener
– 1 pinch salt
– 1/2 tsp baking soda
– 2/3 cp dark chocolate cut into chunks

Instructions:
– Preheat oven to 375 degrees Fahrenheit.
– Mix gluten-free flour, salt, and baking soda in one bowl.
– In a separate bowl, mix the melted vegan butter, vegan eggs, raw monk fruit sweetener, and monk fruit sweetener in one bowl.
– Combine both bowls of ingredients and mix thoroughly. Add the dark chocolate chunks.
– Roll about 2 tbsp worth of dough into balls. Place dough balls on a lined baking pan.
– Bake in oven for 9 minutes. – Cool on cooling rack.

For the Double Chocolate Cookies:
Ingredients:
