Ginger Spring Onion Sauce, A Versatile Sauce That Goes Well

Ginger Spring Onion Sauce, a versatile sauce that goes well with noodles, rice or as a dipping sauce. It’s easy to prepare and only needs simple ingredients – ginger, spring onion (scallion), oil and salt.

Store this sauce in your refrigerator and you can create a quick meal with it in no time. I can eat it with just steamed rice!
You may add a tablespoon of this sauce into air fried tofu, doubao, stir fry mushrooms or steamed vegetables or serve it as a dipping sauce for gyoza & dumplings.

Ingredients:
90g Fresh ginger
5 stalks Spring onion
1 tsp salt
½ cup olive oil/vegetable oil

Method:
1. Peel ginger, smash with a chopper knife and mince finely or grate it with a grater. May use a food processor to pulse till finely chopped. Set aside in a bowl.
2. Cut spring onion into about 1cm length and mince till fine or may use a food processor to chop till fine. Add it into the bowl of minced ginger.
3. Add salt.
4. In a saucepan heat up the oil (almost begin to smoke), carefully pour into the bowl with the ginger and spring onion. Stir it. Let cool and serve.

Note: This keeps well in the fridge for up to 2-3 weeks airtight covered.
