GF Mediterranean Pasta Salad.
It’s another pasta recipe, who would have thought? I love pasta, what can I say?! A summery pasta salad is exactly what you need to feel both light and healthy! This guy is soooo flavorful, you can seriously eat the whole bowl in one sitting. The longer the pasta sits and marinates in all of that FLAVOR.. the better. Enjoy!
» Pasta Ingredients «
•2 cups cooked gluten free pasta (@barilla)
•1/2 cup broccoli, chopped
•1/2 cup zucchini, chopped
•1 cup mushrooms, sliced
•1/3 cup of celery, chopped
» Dressing Ingredients «
•1/3 cup lemon juice
•1/3 cup olive oil
•1/2 TBSP sugar
•1 TBSP garlic powder
•1 TBSP basil, red pepper flakes, parsley
» Toppings «
•1/3 cup olives
•1/3 cup feta
•1/4 cup fresh basil leaves
» Instructions «
Preheat the oven to 450 F.
Drizzle veggies with olive oil, salt, pepper, and roast in the oven for 20-25 minutes on a foil lined baking sheet.
Add veggies to cooled, cooked pasta.
Mix together all of the dressing ingredients and pour over pasta + veggies.
Sprinkle on dried parsley, feta, and throw in those olives!!
The more it sits to marinate, the better it tastes.
