Despite being interested in veggie recipes 🥕🍠🧅🌽🥦🥒🥬🥑🍆🧄🥔🌰 since 1993, I’m still learning. And recently my favorite produce lady explained the difference between various eggplant colors to me.

So here it goes: the white ones are the mellowest (the sweetest); the purple ones are the bitterest (the most tangy ones); and the medium ones with white and purple stripes are simply the medium ones😅.

And that’s why these days I try to buy only the white eggplants since they don’t require any pre-preparation. And when I can’t, I just go back to my old ways – cut the eggplant, sprinkle it with salt, let sweat for 20-30 minutes, and then rinse and pat it dry.

Ingredients:
2 medium white eggplants 🍆🍆
2 tbsp olive oil
4 garlic cloves 🧄
½ cup water 💦
2 tbsp Tamari (gluten free soy sauce)
4 tbsp agave nectar
1 tbsp dark sesame oil
2 tbsp sesame seeds
.
Wash, trim and dice the eggplants. Preheat the olive oil on a pan. Press the garlic onto it and stir fry on a medium heat until golden for 2-3 minutes. Add the eggplants, water, soy sauce and agave nectar. Mix well, cover and braise on a medium heat stirring from time to time until soft (about 10 minutes). Meanwhile toast the sesame seeds on an empty pan/saucepan with a lid. Add the sesame oil to the eggplants and stir. Serve hot sprinkled with toasted sesame seeds.
