Garlic Quinoa with Vegan Parmesan Cheese !

Now this is not boring ! Vegan food is full of rich flavours and of course nutrients ! Quinoa is a super food – it is high in protein and a complete source of protein as it has all 9 essential amino acids needed by our body. With addition of vegan Parmesan cheese – the taste becomes richer without any addition of processed ingredients as the #veganparmesancheese is homemade with cashews and nutritional yeast. Fortified Nutritional yeast is rich in Vitamin B group and very less calorie content. Interesting isn’t it !

Ingredients for Vegan Parmesan Cheese:

🧀Cashews (raw) – 1/2 cup
🧀Parmesan Cheese – 3 tsp
🧀Garlic Powder – 1 tsp
🧀Onion Powder – 1 tsp
🧀Salt – 1 tsp

Blend all these together in dry blender. No cooking required.

For Garlic Quinoa :

🍃Chopped Garlic – 2 tbsp (you can adjust the quantity as per taste)
🍃Onion – 1 medium size, chopped.
🍃Green Chilli – 1 or 2, finely chopped.
🍃Veggies – of choice like carrots, mushrooms, beans, cauliflower, broccoli 🥦, peas, corn – chopped.
🍃Spices : Salt, Black pepper, Oregano 🌿, Chilli Flakes. Adjust to taste.
🍃Quinoa : 1/2 cup

Rinse quinoa and boil in 1.5 cups of water till cooked well. Cover and keep aside. In a pan add oil – I used sesame oil. You can use olive oil or any other oil. Add garlic, onions and green chillies. Sauté till golden brown. Add all chopped veggies and cook for 5-7 minutes till tender. Add spices & boiled quinoa. Now add 2 tbsp of Vegan Parmesan Cheese and serve hot !
