GARLIC MUSHROOM AND SPINACH PASTA🧄🍝🥦⁣

Ingredients for 4:⁣
Enough cooked spaghetti for 4 ⁣
Splash of olive oil⁣
2 white onions, diced ⁣
4 garlic cloves ⁣
250g mushrooms, sliced ⁣
Handful spinach (I used frozen)⁣
1 tbsp butter⁣
250ml single soy cream (I used @alpro )⁣
Freshly ground pepper⁣
Handful fresh parsley roughly chopped ⁣
2 tsp mixed herbs ⁣
2 tsp dried garlic granules ⁣
1 tsp chilli flakes ⁣
1 tbsp vegan cheese (I used violife)⁣
Cooked tender-stem broccoli⁣

In a wok with a splash of olive oil fry the onions for 5 minutes. Then add the garlic, mushrooms, butter and spinach and simmer for 15 minutes. Add plenty of pepper, the mixed herbs, chilli flakes, dried garlic and parsley. ⁣

Pour in the cream, simmer for 5 mins and mix in the cheese and spaghetti.⁣

Serve with broccoli and fresh parsley.⁣
