If you’re looking to add some protein to your mashed avocado, per serve this will boost the content up from about 3g to 10g. The minced garlic, juiced lemon and parsley will also add some extra flavor!

Ingredients (for the mash mixture only)

½ Cup Chickpeas 
½ Avocado 
½ Tbsp Lemon (juiced)
¼ Cup Parsley (chopped) 
1 Garlic Clove (minced) 
Salt & Pepper to taste

Directions

1. In a large bowl, add the chickpeas and avocado. Mash well until everything is smooth. Add the lemon juice, parsley, garlic, sea salt and pepper. Mix well once more.

Roasted Mediterranean Vegetables

This is super easy and delicious. 
For a single serve use about 1 cup of your favorite vegetables. I find eggplant, zucchini, capsicum and purple onion work well.

In a bowl combine the vegetables with about 2 Tbsp’s of balsamic vinegar (find a healthy one) and 1 Tbsp of mixed herbs and some salt and pepper. Roast in the oven for about 30 minutes or until cooked. The vegetables will take on the flavor of the balsamic and taste even better in the following days.

Serve it on a healthy wholegrain bun or sandwich with some fresh greens, sprouts and home-made oil free hummus.
