Galouti Kebab is a mouth melting kebab made with Mutton and is very famous for its taste and texture. But you can always make this kebab using vegetables like mushroom. This Mushroom Galouti is equally good in taste and texture with smoky flavour and aroma. Make this kebab and serve along with tiny kesri lachha paratha and green chutney. Use below recipe to make it.
Onion 2 large
Cashewnut 2 tbsp
Roasted chana dal powder 1tbsp
Ghee 3 tbsp
Ginger 1inch pc
Garlic 7-8 cloves
Salt to taste
Coriander chopped with stems 2tbsp
Cardamom powder a pinch
Garam masala powder 1tsp
Chaat masala 1 tsp
Green chili 1-2 no
Red chili powder 1/2 tsp
Cumin powder 1 tsp
Wash and slice the mushroom, keep aside. Slice onion and roughly chopped ginger, garlic, green chili and coriander.
Put 1 tbsp Ghee in a pan on medium heat. Add sliced onion and saute till golden brown, add cashew and saute till golden brown. Keep aside in a plate.
Heat 1 tbsp Ghee in the same pan and add garlic, ginger and green chilli, saute till golden brown. Add sliced mushroom and salt, saute till moisture evaporates. Add all the powder spices and chopped coriander with brown onion and cashew. Saute for few minutes. Switch off the flame and cool the mixture. Make a fine puree (do not add water) and take out in a bowl.
Add roasted Chana dal powder and 1 tsp Ghee, mix it nicely for sometime. (you can also smoke this mixture by putting live charcoal in a small bowl with some whole spices and adding 1 tsp Ghee then covering the entire mixture with lid for 10 minutes)
Divide into small balls and then shape it round.
Heat a pan and put 2 tsp Ghee. Shallow fry all the kebabs from both side. Sprinkle chaat masala on top and serve with green chutney.
