Mango & turmeric parfaits
Dairy-free| gluten-free vegan plant-based
INGREDIENTS
150g ripe mango, chopped (about 1 small)
80g coconut cream
1/2 tsp turmeric powder
2 tbsp lemon juice
1 tbsp corn starch

Place all the ingredients, except corn starch in a food processor and blend until smooth.
Pour the mixture into a small saucepan, add the corn starch and whisk until its completely dissolved. Heat over medium-high, whisking continuously until it starts to thicken. Let cool down to room temperature and pour into jars or glasses. Place in the refrigerator for 30 minutes or more. Top with coconut yogurt, coconut chips, granola and fresh mango. Enjoy!
