For this no recipe, recipe make a pot of couscous with vegetable broth (I used my homemade from vegetable scraps). While that is cooking chop some garlic, tomatoes, and peppers. Cook the garlic in some olive oil over a medium heat for about 30 seconds and then added the tomatoes and peppers. Season with a little salt, gochugaru (Korean red pepper flakes), and a teaspoon of honey. Let cook down for about 10 minutes, until the tomato’s are nice and saucy. Top the couscous with the veggie sauce and some sliced scallions.
