Fried tofu, with green veg and loads of holy basil. Friday treattime lunch, which was so delicious! I love the flavour of holy basil.

Pressed the tofu, cut into cubes and marinated in a little tamari and minced garlic.
Fried the tofu in a wok with a little oil on a high heat, and put to one side when browned.
In a mug/jug, put 2.5 tbsps brown sugar/agave, 4 tbsp tamari/soy, a little water, 1/4 tsp chilli paste, 2 tbsp cornflour (optional splashes of rice vinegar, vegan fish sauce, sesame oil, lime juice). Mix together witha fork and put to one side
Onion in wok first, then when going clear, sliced garlic, minced ginger, sliced spring onions, siced chilli.. Then pieces of green pepper. A little later shredded chinese leaf. Then put the fried tofu in to heat back up.
Add the sauce ingredients, and stir under heat until thickened.
Chop up 20-25g of holy basil, and mix in.
Turn off heat and prepare to serve.
