French Toast with Blackberries!
I grew up eating and making French toast, but I haven’t had it since I stopped eating eggs. I was afraid to try making a vegan version because I didn’t want to be disappointed, but I’m glad I finally made it for brunch today! 😊

🍞 My bread of choice was @daveskillerbread’s thin-sliced White Bread Done Right. Since it was thin-sliced, I decreased the soaking time from 10 seconds to 5 seconds per side, but the bread was definitely sturdy enough for the job.
Of course vegan French toast doesn’t taste exactly like traditional French toast, but it doesn’t have to! It’s still sweet, crispy, and decadent!
I think a big part of changing your diet is accepting that foods don’t have to be familiar to be delicious. What you eat now doesn’t have to be the same things you’ve eaten your whole life. Once you come to terms with that, you open yourself up to a world of ingredients and flavors that you didn’t know you were depriving yourself from, and you can enjoy a healthier variety of foods and find new favorites along the way!
